thoughts concerning paella
does anyone adore a nice old spanish paella like i do? I like it specially with chicken,not so much with seafood althought you can put in pretty much anything which is why it's so popular, my mum can shape up a wicked paella in the wink of an eye!! any tasty thoughts about this tasy dish?

Hi, Food Fanatique, I'm mad on paella too, because I have eaten it a lot when I have been in Spain. It is supposed to be a very ancient dish, introduced into Spain by the Moors in the Middle Ages, along with rice itself! In Valencia they make it with lots of seafood, mussels, clams and prawns, while in Cataluna they make it with rabbit. My favourite is the vegetarian paella with peas and beans. Anyone have a good recipe?
